How to make easy, no cook strawberry freezer jam

If you dont like heating up the kitchen on a summer day or just like shortcuts, heres a strawberry jam recipe for you. This is a freezer jam- which means it needs to be stored in the freezer if not used within 2 weeks. Store thawed jam in the refrigerator.

This recipe makes 4- half pints. Most families will use small quantities of strawberry jam at a time so dividing the recipe into half pints makes sense. Make jam in small batches for the best results and dont double recipes. Any clean, dry containers with a tight fitting lid that will withstand freezing can be used.

You can find liquid pectin in most grocery stores; its generally sold near canning supplies, which are usually in the baking or seasoning ingredients aisles.

Ingredients

1 quart of fresh strawberries, washed and caps, (leafy area on top), removed

4 cups of sugar

2 tablespoons lemon juice- fresh squeezed or concentrate

1 pouch of liquid pectin

Slice and crush strawberries. Measure out 1- 3/4 cups of crushed berries. Eat the rest. In a large bowl combine the strawberries and the sugar, toss gently and let the mix stand for 10 minutes.

Put the lemon juice into a measuring cup and add the liquid pectin. Stir well. Pour this mixture into the strawberries as you continue to stir. Keep stirring until the mixture starts to thicken, about 3 minutes. Fill your containers. Cover each container and let sit in the refrigerator until the jam is thick, this could take a day. After the jam is thickened freeze any containers you wont immediately use. Store thawed jam in the refrigerator.

Easy food gift ideas: Cookie kits

If you are looking for an easy food gift to give another family at Yule or Christmas, this kit is perfect. You can pick everything up at the grocery stores located in Bangor, Maine or elsewhere, with the possible exception of a basket to put everything in.

Needed Components

2 sugar cookie mixes, found in pouches

tubes of icing in holiday colors

colored sugars in holiday colors

a cookie cutter for each family member, in holiday shapes

basket

bow

tag

Place the mixes, icings, sugars and cookie cutters into the basket and add a bow.
Fill out the tag and place this in or on the basket.

Other options for this gift would be using a gift-in-a-jar mix, or purchasing a cookie sheet to place under the basket and attached with ribbon. A bucket of assorted holiday cookie decorations could be placed on the baking sheets as well, rather than placing them in a basket. You may also be able to find a bucket or tin filled with just holiday cookie cutters.

Another idea is to make a batch of the cookies yourself to give as the gift, to go along with all the components. This way, the recipients can enjoy the cookies while waiting for a convenient time to make their own.

Kid-friendly cooking: easy to make holiday treats

Cooking and kids are a natural combination, and little hands in the kitchen make for a fun and rewarding educational opportunity. Cooking teaches a child a number of valuable life skills; measuring ingredients teaches fractions, following a recipe involves reading and organization, heating and baking involve telling time and the entire process of assembling ingredients and waiting for results teaches patience. Cooking also encourages creativity. However, working around a hot stove or with potentially hazardous equipment such as a mixer or a knife may deter a parent from allowing his or her child from helping with food preparation.

These two recipes for holiday candies are child-friendly. They use a minimum of ingredients and depend on the microwave oven for cooking. Not only are the candies easily prepared, they are fast enough to engage even those children whose attention span and activity level rivals that of a flea. Although the recipes make large batches, don't expect to end up with the full measure of candies. Munching on the ingredients is as much a part of cooking as measuring and mixing.

Peanut Butter Fudge

1 14 oz. can sweetened condensed milk

12 oz. vanilla candy coating or vanilla chips

dash salt

1/2 c. creamy peanut butter

1/2 c. chopped peanuts

1 tsp. vanilla

Place candy coating, salt and milk in large microwave-safe bowl. Melt together in microwave at 100% power for 5 - 6 minutes, stirring with wooden spoon every 1 1/2 minutes. Stir in peanut butter and vanilla until both are thoroughly blended in. Stir in peanuts. Pour mixture into foil-lined 8 or 9-inch square pan, cover pan with additional foil and chill in refrigerator until firm, about 2 hours. Turn fudge onto cutting board, peel off foil and cut into squares.

Makes 2 1/2 pounds.

Tips:

Semisweet chocolate chips, milk chocolate or dark chocolate candy melts or peanut butter chips can be substituted forthe vanilla candy coating. Using milk chocolate melts creates a fudge that tastes like Reece's Peanut Butter Cups.

Any chopped nut, salted or unsalted, can be substituted for the peanuts.

Fudge can be poured into smaller, disposable aluminum pans for gift-giving. You don't need to cut these into squares - just put a bow on the covered pan and let the recipient choose their serving size.

Martha Washington candy is a pecan-filled treat that involves no cooking at all. According to Sherian Davis Weiss and Charis Freiman-Mendel (author of Cook Your Way Through The S.A.T.), this confection is a traditional holiday treat in the south. The filling is similar to fondant. Mom or an older child should be in charge of melting the chocolate

Martha Washington candy

1 14 oz. can sweetened condensed milk

2 pounds (8 cups) confectioners sugar, sifted

2 cups chopped pecans

1 3oz can coconut

1 stick softened butter (1/2 cup)

1 package semi-sweet chocolate chips

In a large bowl, stir together milk, sugar and butter. Knead in pecans and coconut. Mixture will resemble modeling clay.

Roll 1" balls. Insert a toothpick in each ball and place on a cookie sheet. Refrigerate until firm, approximately 2 hours.

Place chocolate chips in a deep, microwave-safe bowl. Heat in microwave at 50% power for 2 - 3 minutes until melted, stirring after each 1 minute interval. Anchor each candy ball with a toothpick and dip into the melted chocolate. Refrigerate until coating has hardened. Makes 4 dozen.

Tips:

Not crazy about coconut or nuts? Try substituting chopped red and green candied cherries for the nuts. The cherries create a festive appearance and taste wonderfully with the chocolate coating.

Easy dinner recipes

Do you have days where you just do not feel like cooking? Or maybe you do not have a lot of time to invest in cooking? Here is an easy dinner recipe for you to try. It will not take you long to prepare, so also included is an easy dessert recipe.

I have made this for my family a couple of time and even the pickiest of eaters enjoyed it!

You should be able to make them both in about 30 minutes!

Beef and Rice

1 lb. ground beef (or chicken or turkey)
2 packs of instant rice
1 can of beef, chicken or turkey gravy

Prepare your 10-minute rice in the microwave, according to the directions on the box.
While rice is cooking, brown your meat in a skillet on the stove.
Drain rice, spoon it onto the plates.
Add cooked ground meat over the rice.
Pour gravy over the meat.

Add a veggie and you will have a complete meal.

No-Bake Candy

1 bag semi-sweet chocolate chips
1 cup of raisins
1 cup mini marshmallows (optional)

Line a cookie sheet or two with wax paper.
In a double broiler (which can be made by filling a pot half way with water and placing a glass bowl over the top, making sure the bowl does not touch the water), add chocolate.
Stir chocolate as it melts.
When melted, add raisins (and marshmallows, if using).
Turn off heat.
Stir until combined.
Using a teaspoon, spoon out one at a time onto wax paper.
Put in refrigerator to harden.

You can add more raisins if you would like to.

If you would like something even easier thanthis candy recipe, you can take your favorite stuffed cookies (such as Oreo's or Nutter Butter's) and dip them into the melted chocolate!

Little smokies with sweet barbecue sauce

Ingredients

1 14 ounce package of little smokies or meatballs

2 cups barbecue sauce

2 tablespoons grape jelly

Recipe

1. In a pot or slow cooker combine all of the ingredients.

2. Cook for 2 hours on low if using the slow cook or for 10 minutes on medium heat on the stove top. Serves 4-6.
