Christmas morning is a busy time for opening gifts, snacking on goodies, listening to Christmas music, and most often, trying to prepare for a big dinner later in the day. The cook often gets stuck in the kitchen, missing out on some of the fun. Make dinner preparation easier on yourself by using the slow cooker.
Not only are you going to be busy cooking all of your dinner components, you will also be cramped for oven space. It is not easy to find a menu that will allow you to cook all things at the same temperature at the same time. If you find it, let me know! In the meantime, free up some oven space with these easy potatoes.
Slow cooker scalloped potatoes
Ingredients:
8 yukon gold potatoes
2 small yellow onions, sliced into rings
1 tsp salt
1 tsp pepper
1 1/2 tsp garlic powder
3 Tbsp butter
4 Tbsp flour
2 1/2 cups skim milk
2 cups shredded cheddar cheese
1/2 cup fresh grated parmesan cheese
1/2 tsp salt
Directions:
Lightly spray the inside of slow cooker with cooking spray (use melted butter if desired). Layer 1/2 of the potatoes into the bottom. Next layer the onions and then the rest of the potatoes. Sprinkle with salt and pepper. In a medium saucepan, melt butter, cooking on medium. Mix in flour and 1/2 tsp salt. cook while stirring for one minute. Add in milk and cook until thick. Stir in cheese and stir to melt for about 60 seconds. Poor cheese sauce over potatoes. Cover and cook on low 7-8 hours.
