There is nothing more comforting than a hot bowl of chicken and dumplings on a cold winter day. Well, on any day for that matter. Chicken and dumplings can make any day a little brighter, especially when you combine quick, easy, delicious and economical to the recipe.
My mother has made chicken and dumplings using canned biscuits for as long as I can remember and they turn out wonderful each and every time. Through the years I have tweaked this recipe using a variety of vegetables, herbs and seasonings but sometimes simplicity is the best policy. This is the simple version of chicken and dumplings.
Ingredients for Chicken and dumplings:
3 chicken leg quarters
6 cups water
3 cans biscuits
1 tsp. dried parsley
1 tsp. dried celery flakes
1 stick margarine
salt and black pepper to taste
Cooking method for chicken and dumplings:
Place the chicken leg quarters into a large stew pot. Cover with six cups of water. Bring to a boil over medium heat and cook until tender, about 45 minutes. Add water when necessary to keep the liquid at about six cups.
Remove chicken from the broth and place into a bowl of cold water to cool.
To the boiling chicken broth add parsley, celery flakes and margarine. Reduce heat to simmer. Remove the biscuits from the can and pinch in half. Add biscuits to the chicken broth and cook until done, about 10 to 15 minutes.
While the dumplings are cooking remove the skin and bones from the chicken and discard. Cut the chicken into bite sized pieces and add to the dumplings. Add salt and pepper.
Let the chicken and dumplings simmer for about 10 minutes then serve.
Chicken and dumplings tips and variations:
1. Substitute boneless, skinless chicken breast, for a healthier version of chicken and dumplings.
2. Add diced carrots, potatoes, sweet peas and fresh diced celery to the chicken and dumplings for a heartier version.
3. Running low on spices? Try making the chicken and dumplings with the first three ingredients only. Salt and pepper to taste. It's still delicious.
4. The longer you cook your chicken and dumplings the more chewy the dumplings become.
