Picnic days are right around the corner. Are you thinking fried chicken, potato salad, and brownies? Heres a delicious way to prepare the chicken without standing over a hot stove until the moment you leave the house. Of course, you dont have to fix this recipe for picnics only; your family will love it all year.
You need only the most basic ingredients; pick them up at Save-A-Lot at 544 Canton Road in Akron.
BREADED CHICKEN
Remove skins from chicken pieces. Wash and drain on paper towels.
In one dish, put bread crumbs. Sprinkle with salt and pepper. Stir in about 2 tablespoons of flour.
In another dish, beat 3 eggs with a fork.
Add one piece of chicken at a time to the eggs and then the crumbs. (Press the pieces into the crumbs and gently shake off the excess.)
Heat oil in frying pan. (Oil should be deep enough to cover chicken.)
Brown chicken well in hot oil, turning once. Drain on paper towels.
Line a cake pan with foil. Add chicken, making sure they are standing on their sides, not lying down.
Cover loosely with foil.
Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees; bake for an hour and 15 minutes, or up to 2 hours. Uncover the last 15 minutes to crisp up the chicken.
