Braising the chicken first not only cuts down on the cooking time, but tenderizes it and enhances the flavor. Braising is simply cooking it in oil briefly on both sides prior to adding a liquid.
This recipe calls for apricot preserves. Since this is a wonderful additive for many recipes, you may want to keep some on hand. In Grand Rapids, you can pick up Meijers own brand of these preserves you will love the taste.
Apricot Glazed Chicken Recipe
Ingredients:
- 6 chicken breasts, skinless, boneless, and cut in half
- Flour
- Olive oil
- 2 cups chicken broth
- 1 cup apricot preserves
- 2 tablespoons soy sauce
- 2 tablespoons water
- 2 tablespoons cornstarch
Directions:
Pour just enough olive oil in a large skillet to coat the bottom and sides. Coat the chicken with the flour and place in the skillet. Cook for 5 minutes, then slip to the other side and cook for 5 more minutes.
In a bowl, mix together the apricot preserves and soy sauce. Stir together the water and cornstarch, then add to the other ingredients. Pour over the chicken, cover and simmer for 20 minutes. Uncover and turn chicken over so that the sauce coats both sides.
