Quick and easy popovers

Popovers are a tasty treat that can be eaten with a variety of toppings, but unfortunately most recipes are complicated to the pointof being scary. In a cookbook put out by the Plum Creek Library Systemof southwestern Minnesota, however, there's a popoverrecipe that's amazingly simple.


These delicious side dishes literally take 5 minutes to make together. It's not much more trouble than opening a can of biscuits, and so much tastier, healthier and more fun!

No Beat Popovers


Ingredients:

2 eggs, slightly beaten

1 cup milk

1 cup flour

1/2 tsp salt


butter or cooking spray to grease the muffin tins




Utensils:

mixing bowl or pitcher (to make it more kid-friendly, use a pitcher. This will make filling the muffin tins MUCH easier)

muffin tins (you'll need 12 cups total)

whisk or long spoon


Steps:


  1. Break the eggs into a bowl or pitcher and lightly mix them (let your kids do the breaking. You can always fish out the shell pieces).

  2. Add the other ingredients and mix it all together, ignoring anylumps (there will be plenty!).

  3. Butter the muffin cups or coat them with cooking spray (useplenty, especially on the bottom -- these will STICK).

  4. Fill the muffin cups about 3/4 full with the batter.

  5. Put the muffin tin in a cold oven, turn it on to 450 degrees, andset the timer for 30 minutes. DO NOT OPEN THE OVEN DOOR DURING THISTIME. It will make the popovers fall. Just forget all about it untilthe timer goes off.

  6. When you take them out of the oven, puncture the sideof each popover with a knife to let the steam out.


These can be served with a variety of toppings, from butter (whilethey're still hot) to honey, jelly, marmalade, or preserves. They are especially tasty with a good quality jam or jelly.
