Easy turkey leftovers

Wondering what to do with all of that extra turkey? Try a couple of these quick remodels...
Smokey Turkey Tacos
Serves 4
8 corn tortillas
2 cups shredded cooked turkey
1 teaspoon olive oil
1/2 yellow onion, thinly sliced
2 cloves garlic, smashed and minced
1 teaspoon chipotle powder (you could use chili powder or paprika for less heat)
salt and freshly ground black pepper to taste
sour cream, fresh chopped cilantro, diced tomato, and lime wedges for garnish
Heat the oil in a medium skillet over medium-high heat. When it shimmers, saute the onions and garlic until the onions become soft, about 2 minutes. Add in the shredded turkey, chipotle powder, and salt and pepper to taste, stirring constantly to thoroughly mix ingredients.
Meanwhile, wrap corn tortillas in damp paper towels, place on a plate, and microwave about 20 seconds to make them soft and pliable.
To build tacos, place 1/8 of the turkey mixture in the middle of one corn tortilla, then top with chopped tomato and cilantro, sour cream, and squeeze lime juice over the mixture. Fold and eat.
Turkey Salad
Serves 4-6
6 eggs
6 cups cooked turkey meat
1 (16 ounce) jar sweet pickles, chopped
1 1/2 (10 ounce) jars mustard-mayonnaise blend
3/4 cup mayonnaise
Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
In a large bowl, thoroughly mix the eggs, turkey, pickles, prepared sandwich and salad sauce and mayonnaise. Chill in the refrigerator approximately 3 hours before serving. Use with crackers or as sandwich filling.

Healthy cooking: Pasta in a white wine lemon sauce (Photos)

After those lazy days of summer, it can be hard to get back into the normal routine including cooking dinner! This easy white wine lemon pasta recipe is perfect for this time of year because its still light enough for warm days, but the pasta makes it filling. With simple, healthy ingredients and minimal prep time, this is a dinner that will leave you feeling better than if you had reached for the take-out menu.

Ingredient note: While any spaghetti would do, Ronzoni Healthy Harvest was used here. This brand of pasta is a blend of durum whole wheat flour and semolina, resulting in lighter pasta than many other whole wheat brands. With three times the fiber of most regular pasta, a smaller portion is quite filling. It's low in fat, cholesterol and sodium-free, and even Heart-Check Certified by the American Heart Association.

Ingredients:

  • Approximately 6 oz. Ronzoni Healthy Harvest Spaghetti
  • 2 cloves garlic, peeled and minced
  • 1 Tablespoon extra-virgin olive oil
  • 1/2 lemon, thinly sliced, plus 1 teaspoon lemon juice
  • 1/4 cup dry white wine
  • 2 Tablespoons capers, rinsed, then squeezed dry
  • 1 Tablespoons butter

Directions:

  • Bring a large pot of generously salted water to a boil. Cook the pasta about 2 minutes less than the al dente cooking time stated on the box (the pasta should be quite firm; it will continue to cook in the pan with the sauce).
  • While pasta is cooking, heat olive oil and garlic in a large saut pan over medium heat just until garlic starts to brown.
  • Remove pan from heat and pour in the wine.
  • Replace pan on the stove and cook 1-2 minutes more, until wine is reduced by about half.
  • Strain pasta, reserving cup pasta cooking liquid. Add pasta and reserved pasta cooking liquid to saut pan and stir into the sauce.
  • Add lemon slices, capers and butter and continue to cook for another 2 to 3 minutes, tossing and stirring constantly.
  • Serve in portions or at the table directly from the pan, with lots of crusty bread to soak up the sauce.
  • Makes 3-4 servings.

Roti bread quick and easy

Roti bread is perfect with a savory curry and is a snap to prepare. Just 5 ingredients, little effort and time and you will amaze your friends and family with this fun and versatile bread. Check out the slide show below for step by step instructions.

Roti Bread Quick and Easy

  • 4 cups all purpose flour or whole wheat pastry flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cups water
  • Olive oil

Mix dry ingredients together.
Add water and mix well.
Knead for about 2 minutes; dough will be pliable and sticky.

Place dough into a bowl greased with olive oil.
Cover with damp clothe and let rest for 20 to 30 minutes.

After rest time oil hands and work dough again a few turns and divide dough into 4 to 8 balls. Cover with damp cloth and let rest 20 minutes.

Depending on the size of the surface you are cooking on you can divide the dough into 4 or 8 balls.

Dust surface of counter with flour and roll dough ball out very thinly.

Heat an iron skillet or griddle to medium heat.
When ready to cook roti, brush small amount of oil onto cooking surface and gently lay rolled out roti onto iron skillet.
Gently brush top surface of roti with oil and allow to cook 1 to 2 minutes keeping a close eye on the underside that it does not scorch.
Adjust your heat up of down depending on how your roti is cooking.
When roti is the desired color and doneness flip with tongs and cook on 2nd side.
Transfer to a plate or board and continue with rest of roti.

Serve with any curry or a savory lentil dish.

It is easy to make homemade french fries

Homemade french fries are so easy to make if you know how to cut the potato. You can fry or bake the french fries, but the cutting is the part that people seem to fear. It's really quite simple. Be sure and refer to the color chart above.

  1. Start with a potato and a sharp knife.
  2. Make one vertical cut down the center.
  3. Take the potato half and place it flat on the cutting board. Cut that half into four segments.
  4. If you want smaller fries, you can cut those wedges in half. Repeat for other potato half.
  5. Place on a pan well-oiled with olive oil. Sprinkle with olive oil and sprinkle with coarse salt. Bake at 400 until golden brown.
  6. Serve with a favorite sauce.

You may have special seasoning that you like for cottage fries such as seasoning salt or garlic salt. Often I soak them in vinegar and sprinkle with sea salt before baking. Balsamic vinegar is good, but it does discolor the fries a bit.

In the picture above, the homemade fries are served with Frank's Spicy Sweet Sauce. Many people serve homemade french fries with mayonnaise. Paula Deen uses a seasoned mayonnaise. Another option is a curried ketchup, used as a dipping sauce for fries around the world.
