Cooking Class: Easy focaccia with dipping sauce (Slideshow)

If there is one aroma that is more welcoming than any other, it would have to be the wonderful smell of freshly baked bread.

Focaccia is Italian peasant bread that is rich with the distinctive flavor of olive oil. Often this crusty bread is topped with fresh herbs, Parmesan cheese, or simply kosher salt and freshly ground pepper. Caramelized onions or sundried tomatoes also make wonderful toppings for this versatile bread. Try using this as pizza crust or use the bread for a gourmet sandwich.


This focaccia is topped with fresh rosemary, garlic, kosher salt and freshly ground pepper. Feel free to adjust the amount of garlic to personal taste.


As always when working with yeast, if it doesn't foam and bubble when activated with the water and sugar, throw it out and start again.

Rosemary and Garlic Focaccia


  • 1 package active dry yeast

  • 1 teaspoon sugar

  • 1 cup warm water (105-110 degrees Fahrenheit)

  • 2 1/2 - 3 cups flour, divided

  • 1/2 stick butter, softened

  • 1/4 cup fresh rosemary, chopped and divided

  • 1/2 teaspoon table salt

  • 3 garlic cloves, minced

  • 1 teaspoon kosher salt

  • Freshly ground black pepper



Directions


Preheat oven to 375. Brush a 15x10 jellyroll pan with 1 tablespoon olive oil.


In a small bowl, combine yeast, sugar and warm water. Mix together and let stand for 5 minutes.


In a large bowl combine 2 cups of the flour and the yeast mixture. Stir until a soft dough forms. Cover with a towel and let rise in a warm place for about an hour or until doubled.


Turn the dough out onto a lightly floured surface and knead in enough of the remaining flour to make a firm dough.


Gradually knead in the butter, half of the rosemary and the table salt. Knead until smooth and elastic, about 5 minutes.


Roll the dough into a 15x10 inch rectangle and place in prepared pan. Dimple the dough all over with fingertips. Sprinkle with the minced garlic, and the remaining rosemary. Drizzle all over with the remaining 3 tablespoons of olive oil. Sprinkle with the kosher salt and pepper.


Bake for 20-30 minutes until golden.


Makes 8-10 servings


Balsamic and Garlic Dipping Sauce


  • 1/2 teaspoon Italian seasoning

  • 1 garlic clove, minced

  • 1/2 teaspoon balsamic vinegar

  • pinch of salt and pepper

  • 1/4 cup olive oil


Directions


In the center ofa small saucer or serving dish, combine the Italian seasoning, garlic, vinegar, salt and pepper. Pour the olive oil over the mixture and serve with warm focaccia.


Makes 1/4 cup
