Easy meatloaf recipe

Ah, meatloaf; what better way to warm you up after a rainy spring day! This recipe takes about 5 minutes to put together and about an hour to bake. And even better than the meal is the delicious sandwiches the next day!

We start with the mixture of ground beef, pork and veal available at the Village Market, as well as most other grocers, and make everything in a food processor.

parsley 1 cup rolled oats or bread crumbs
1 stalk celery 1 6 oz can tomato paste
1 medium onion water to make 1 cup sauce
1.3 - 1.5 lb meatloaf mixture 1 Tb thyme
1 egg salt, pepper
1 Tb Worcestershire sauce Jalapeno pepper slices
  1. Preheat the oven to 350 F.
  2. Put several sprigs of parsley in the food processor and add the celery stalk, cut into pieces. Peel the onion, quarter it and add to the food processor. Pulse until uniform.
  3. Add the meatloaf mixture, egg, and rolled oats or breadcrumbs.
  4. Put the tomato paste in a 1 cup pitcher and add water to make 1 cup. Add to food processor.
  5. Add the thyme, salt, pepper and Worcestershire sauce. If desired, add a few slices of Jalapeno pepper.
  6. Pulse until smooth, scraping the work bowl once or twice.
  7. Grease a loaf pan with non-stick spray and add the meat mixture.
  8. Bake for about an hour

Serve with boiled potato and parsley.
