The amazing thing about shepherds pie is the taste -- having the whole meal in one dish is a wonderful benefit! The meat on the bottom is covered with mashed potatoes and its all baked together to create a wonderful flavor. Its truly a comfort food that everyone loves.
Sometimes called cottage pie, shepherds pie has been around for centuries. A cottage pie is sometimes made with mashed potatoes on the bottom, as well as on the top of the meat mixture. A traditional shepherds pie is made with ground lamb thus the reference to "shepherd". You can make the recipe below using ground lamb or ground beef, either work well.
Easy Shepherds Pie Recipe
Ingredients for Easy Shepherds Pie:
- 1 small onion, chopped
- 2 garlic cloves, chopped finely
- 2 pounds ground beef
- 1 cups canned diced tomatoes, with juice
- 1 cups corn
- 1 teaspoon salt
- tsp. pepper
- 6 potatoes, peeled and cut into bite-sized pieces
- 4 tablespoons butter
- cup milk
- 2 tsp. garlic powder
- 1 tsp. salt
- tsp. pepper
- 2/3 cup cheese, shredded (co-jack or cheddar work well)
Directions for Easy Shepherds Pie:
In a large skillet, cook the beef with the onion and garlic cloves crumbling it as it cooks. Once the meat is brown, drain it well. Add the tomatoes, corn, salt and pepper.
In the meantime, place the potato pieces in a large saucepan, cover them with salted water and boil until tender. Drain well. Mash them together with the butter, milk, garlic powder, salt, and pepper. Set aside.
In an oiled 9x13 pan, spread the meat mixture evenly on the bottom. Sprinkle the cheese evenly over the meat mixture. Top with an even layer of the mashed potatoes (dont smooth the potatoes leave some peaks so that the tips will brown during baking). Bake for 30 minutes at 400 degrees. Serve warm.
