Maybe its because Ive been watching reruns of Julia Childs cooking shows, but it seems Im cooking more one-pot meals (maybe because its easy!) This chicken skillet recipe is wonderful, and easy. My family has already requested it again.
If you have the time and inclination, you should soak your chicken in milk for a couple hours before you use it in a recipe. Milk makes the chicken so tender. Just put the chickenin a dish and pour enough milk to cover at least half way, soak it for an hour or so, turn it over and soak it for another hour. You will be amazed at the difference in the texture of the chicken.
Chicken and Potato Skillet Meal Recipe
Ingredients:
- 4 large chicken breasts, cut in half down the center
- 4 large potatoes, sliced
- 1 medium onion, sliced
- 4cloves garlic, minced
- cup butter
- 1 cup flour
- 2 tsp. rosemary
- Salt and pepper to taste
- 2 cups dry white wine
Directions:
In a very large skillet, melt the butter and cook the onion and garlic for about 10 minutes over medium heat.
Put the flour, salt, pepper, rosemary, and a little garlic powder in a plastic bag and shake it to mix. Add the chicken breast halves to the bag one at a time and shake to coat thickly. Move the onions and garlic to the sides of the skillet and add the chicken. Cook the chicken on one side for about five minutes or until crispy and brown, turn the breasts over and cook on the other side until crispy and brown.
Pour the wine into the skillet, place the potato slices on top. Sprinkle the potatoes with salt, pepper, garlic powder, and a little rosemary. Cover the skillet and cook for 25 minutes. Serve.
