Easy microwave meatballs (Photos)

Cooking meatballs in the microwave is such a time-saver. You could make a double or even triple batch of these meatballs and freeze them for later use. Combined with a variety of sauces, these make a wonderful base for easy weeknight dinners!

Recipe:
1 lb. lean ground beef
1/2 cup bread crumbs
1 Tablespoon milk
1 Tablespoon dried onions
1 egg
1 Tablespoon Worcestershire sauce

Method:
Combine all ingredients in a large bowl. Use your hands to thoroughly combine the ingredients together. Squish it together into a lumpy ball.

As you can see from the how-to pictures in the slide show, I like to use a medium-size scoop to make my meatballs. This helps the meatballs all be the same size, therefore cooking evenly. If you dont have one, you can just use your hands or a spoon.

Roll about 2 Tablespoons of the meat mixture, or use a medium-size scoop, into meatballs, rolling and packing the balls tightly. Place on an 88 casserole dish, leaving room between the meatballs. Continue and use all the meat mixture. Cover the casserole dish tightly with plastic wrap (not letting it touch the food while cooking).

Microwave for 3 minutes. Carefully uncover the casserole, letting the steam escape (Dont burn yourself like I did!). Rearrange the meatballs so that the ones in the middle have their turn on the outside, and the outside ones are in the middle. Recover and microwave for an additional 5 minutes. Drain off the grease.

You can easily store your cooked meatballs for future use. If you used hamburger that had been previously frozen, you may store in your freezer for up to 3 months. If you used fresh hamburger, you may store your meatballs for up to six months. Be sure to label your freezer containers well with the full date, and sometimes it helps to also place the good until date on there as well! Be sure to thaw your frozen meatballs in the fridge or under cold water in your sink, never thaw on the counter.
