Easy Cooking Recipes: Easy to prepare lettuce salad recipes (Photos)

Whether you grow your own lettuce in your garden, which is easy to do or purchase lettuce at your local farmers' market or grocery store, lettuce is a nutritious vegetable to include in your meals.

This recipe came out popular 20 or so years ago and was a big hit in different variations. It is a great way to enjoy a salad that can be made ahead of time. Each layer adds a different flavor and texture to enjoy.

This salad is transportable in an ice chest to family reunions and picnics.

Layered Lettuce Salad

Ingredients:

8 c. lettuce (torn into bite-size pieces)
3 c. cauliflower (chopped)
1 c. carrots (thinly sliced)
1 c. fresh mushrooms (sliced) (optional)
1-1/2 c. red onion (chopped)
1-1/2 c. mayonnaise
2 to 3 T. Dijon mustard
1 c. cheddar cheese (shredded)
12 slices bacon (cooked and crumbled)

Directions:

In a 9 x 13 glass dish layer lettuce, cauliflower, carrots, mushrooms and onion. In small mixing bowl combine mayonnaise and mustard; spread evenly over onion layer. Layer cheese and bacon over mayonnaise mixture.

Cover; refrigerate overnight. Makes 10-12 servings.

Marinated Tomato Salad

Ingredients:

1/4 c. olive oil
1 T. white sugar
3 T. white vinegar
2 tsp. parsley (fresh, finely chopped)
1 tsp. green onions (chopped)
1/8 tsp. garlic powder
1/8 tsp. basil leaves
Dash oregano leaves
1/8 tsp. black pepper
12-14 cherry or grape tomatoes (cut in half)

Directions:

Combine and mix well all marinade ingredients, except for tomatoes. Add tomatoes. Cover and refrigerate at least 8 hours or overnight.

Ingredients:

1 pkg. croutons (garlic or herb style)
4 c. salad greens (torn into bite-size pieces)
2 oz. Swiss cheese slices (cut into thin julienne strips)

Directions:

In large salad bowl place salad greens and cheese. Pour tomato mixture onto salad, gently toss, sprinkle crouton over top of salad and serve. Makes 4 servings.
