Chicken with pecan-orange rice makes a delicious dinner for two, whether it is just the two of you at home and the children are grown and gone, or if you want to enjoy a romantic dinner for two.
You can make chicken with pecan-orange rice a complete meal by serving a leafy green salad with homemade salad dressing and steamed asparagus, green beans or broccoli.
Chicken with pecan-orange rice recipe
Ingredients for chicken with pecan-orange rice:
- 1 package (6.2 ounces) fast-cooking long-grain and wild rice mix
- 1 cup orange juice
- cup chopped pecans
- 3 Tablespoons sweetened dried cranberries
- 2 boneless skinless chicken breast halves, approximately to pound
- teaspoon salt
- teaspoon ground black pepper
- teaspoon paprika
- 1 teaspoon dried parsley flakes or 1 Tablespoon fresh flat leaf parsley, chopped
How to make chicken with pecan-orange rice:
- Preheat oven to 350F. Spray 8-inch square pan with cooking spray.
- In prepared 8-inch square pan, mix rice with the seasoning packet from rice mix, orange juice, pecans and cranberries. Place chicken on rice mixture; sprinkle with salt, pepper and paprika.
- Cover the pan with foil. Bake the chicken and rice at 350F 30 to 35 minutes. Remove foil, stir, top chicken with parsley, and bake an additional 5 minutes or until liquid is absorbed and juice of chicken is clear when center of thickest part is cut.
Rachael's Recipe Notes:
- I didn't have long-grain and wild rice mix, so I used cup wild rice and cup long-grain brown rice. I the rice with two crushed chicken bouillon cubes, teaspoon dried parsley flakes and teaspoon dried minced onion. It took a little longer to cook because I was not using the fast-cooking mix. I cooked the rice mixture on the stove for about 10 minutes before adding it to the 8-inch square pan with the chicken.
- I also grated a little orange zest onto the dish before serving.
