Easy cheesy pasta

While it is important to be health conscious, sometimes comfort food is just a necessity. However, this doesn't have to mean going completely off the deep end to eat dinner that comes in a paper bag through a drive thru. Delicious, hearty comfort food can come together at home in a snap without sacrificing a whole day's worth of calories. This is a great example! Enjoy!

Ingredients:

  • 2 thick-cut bacon slices

  • 1 Tbsp each butter and olive oil

  • large onion, finely chopped

  • 1 tsp bottled minced garlic

  • 2 tsp flour

  • 2 tsp Dijon mustard

  • 1 cup reduced fat milk

  • cup sharp cheddar cheese, shredded

  • salt and black pepper, to taste

  • 2 cups whole wheat rotini

  • cup frozen peas, thawed

  • cup parmesan cheese, freshly grated

  • 2 Tbsp fresh parsley, chopped

Directions:

  1. Cook rotini according to package directions.

  2. Meanwhile, cook bacon in a large skillet until done, set aside. Bring pan to medium-high heat and add olive oil and butter. Add onion and saut 4 minutes, stirring often. Add garlic and cook 30 seconds. Add flour and cook 1-2 minutes, stirring often. Combine mixture well with mustard. Whisk in milk gradually and bring to a boil. Cook until slightly thickened. Mix in bacon, cheese, salt and pepper, cooked pasta, and peas. Cook 1 minute. Remove from heat and cover. Let pasta mixture stand for 5 minutes.

  3. Top with remaining ingredients and serve.

There comes a time when you just have to give in to cheese, carbs, butter, and bacon. Feel free to indulge your love handles (but be gentle!) from time to time.
