The following recipe is easy to make and filled with flavor.

Easy cheesy mexican chicken
Ingredients
4 boneless skinless chicken breasts
2 teaspoons paprika
1 teaspoon chili pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 teaspoons brown sugar
1 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon olive oil
1/2 cup cheese- sharp cheddar, colby jack or monterey Jack, or any combination of these three
Sour cream and salsa for serving
Recipe
1. Place the chicken between sheets of waxed paper. Pound with a meat mallet until 1/2 an inch thin.
2. Combine the paprika, chili powder, garlic powder, onion powder, salt, pepper and brown sugar in a small bowl. Rub this mixture into the chicken on both sides.
3. In a large pan add the olive oil. Set to medium-high heat. Place two of the chicken breasts. Cook for 5 minutes on each side, or until fully cooked. Set aside, and continue cooking the remaining chicken. Add more olive oil if needed.
4. Preheat the oven to the broil setting. Place the chicken breasts on a cookie sheet. Top with all of the cheese. Broil for 3 minutes, or until the cheese is fully melted. Keep a close eye on the oven--- broiling cooks very fast and has a tendency to burn what you are cooking.
5. Serve the chicken with sour and salsa on top. Serves 4.
