Easy Cooking Recipes: Quick and easy recipes: Southwest chicken and pasta salad

This quick and easy recipe will please a crowd. There is little preparation, and there is little real cooking, especially if you use the pre-cooked chicken breasts from Tyson that you just throw on a plate and microwave. (They are called, "Grilled and Ready," and you can purchase them at Kroger in Bristol in the case with the grilled chicken strips.) Boiling pasta is about the extent of the cooking involved.

Most kids like Southwestern food, and this dish manages to sneak in a lot of healthy food in one dish. The directions say to chill before eating, but it is really even better heated up and served with a dollup of sour cream. Why not have Fiesta Night at your house? Add a basket of tortilla chips and some Queso or Salsa, and you have the making of a fun Mexican night.

Ingredients:

Shell Pasta: 1 box
Cooked and cooled chicken breasts: 5
Shredded Mozzarella: 2 cups
Canned corn: 1 can
Diced Tomatoes: 2 regular cans any variety (I used one plain and one fire roasted.)
Garbanzo beans: 1 regular can
Black Beans: 1 regular can
Grated Parmesan: 1/2 cup plus extra for sprinkling
Taco seasoning: 1 package
Olive Oil: 1 1/2 tablespoons
Red wine vinegar: 1 1/2 tablespoons
Salt and pepper

Directions:

Cook the pasta and drain.
Drain all canned items.
Combine pasta, canned items, oil and vinegar.
Add Taco seasoning and mix well.
Add diced chicken and cheese. Toss well.
Salt and pepper to taste. You can add additional chili powder, garlic powder, or onion powder if you desire.
Eat warm with sour cream or chill before serving with a sprinkle of Parmesan cheese.
