Its late summer, and most people are trying to fit in the last tastes of summer before the fall season starts. However, even if the weather changes BBQ is a meal that is cross seasonal. You can eat BBQ pulled pork on a hot late summer afternoon or on a cold fall evening. All you need is your favorite BBQ sauce and a couple of spices to make a pork butt sing in the slow cooker. No need to stand over a smoker or grill all day, although you are welcome too. All is needed is a slow cooker for juicy fall off the bone easy BBQ.
Ingredients:
1 large pork butt (5-8 pounds, whatever can fit in your slow cooker)
1 large bottle of favorite BBQ sauce (I used the Neelys BBQ sauce, another good choice is Sonnys Sweet BBQ sauce)
2 tablespoons of dried thyme
2 tablespoons of garlic powder
How to:
Place pork butt in your slow cooker, fat side up. Sprinkle the dried thyme and garlic powder over the top of the meat and rub into the fat/skin. Pour half the BBQ sauce of choice into the slow cooker. Spoon the sauce over the pork butt, and make sure everything is incorporated around the pork butt.
Turn on your slow cooker on low, and cook for 8 hours. The pork butt will be fall-off-the-bone tender, and because you placed the butt fat side up, the fat melted down during cooking and naturally basted the meat with all that wonderful pork flavor. Not to mention the fat was rubbed down with thyme and garlic powder making an even flavorful basting liquid.
When you open the slow cooker, it should be full of juices left off from the pork. Take a large tong and fork and take out the BBQ in big pieces and place on a platter; it will be falling apart. Take two forks and start to shred the meat to make pulled pork BBQ. Pour the liquid out of the slow cooker and place the shredded meat back into the crock. Pour the rest of the BBQ sauce all over the pork and mix well. You can keep the pork warm in the crock while you serve the BBQ, then when you are done, it stores wonderful in the fridge to be used throughout the week for leftover BBQ sandwiches.
Also, you can try some re-makes on this pulled BBQ; place it on some cheese pizza and bake in the oven for BBQ pizza. You can place on toasted hoagie rolls and top with melted cheese for a spin-off of Philly cheese steaks. Possibilities are endless.
