Best weeknight dinners for summer or back to school: Cuban quesadilla recipe

Looking for a quick, delicious weeknight dinner? Try this easy Cuban quesadilla recipe. Whether it is summer or back to school, easy and tasty food that the kids will eat for dinner is a must.
You can substitute thinly sliced or shaved deli turkey for the ham in this Cuban quesadilla recipe, if desired. If you prefer sweet pickles, you can substitute them instead of dill pickles.
Make your own flour tortillas and dill pickles instead of buying store bought. The ingredients listed are approximate. If you want more or less of any ingredient, feel free to make the recipe your own. Mozzarella, Cheddar or pepper Jack cheese may be substituted for the Swiss cheese.
The Cuban quesadillas make a delicious, complete dinner when served with crock pot chicken tortilla soup and a salad made with dark leafy greens and a simple oil and vinegar dressing.

Cuban quesadilla recipe

Ingredients:

  • 4 whole wheat or flour tortillas (8 to 10-inch)
  • 4 teaspoons horseradish or spicy mustard
  • 4 ounces Swiss cheese, shredded and divided
  • pound (12 ounces) thinly sliced or shaved deli ham
  • 4 teaspoons finely chopped dill pickles

Directions:

  • Spread mustard on half of each tortilla. Layer half Swiss cheese, ham, more cheese and chopped pickles. Fold over and heat in a skillet until browned on the outside and the cheese melts. Carefully flip over and repeat.
  • Yield: 4 servings
