Easy Fall comfort food recipes (Video)

Baking and cooking comfort foods in the Fall is one of my favorite aspects of the season! Here is a list of easy comfort food recipes for you to try this fall.

Not too many things scream Fall like hot cheese topped with fruit being enjoyed by crackers!

Fruit Topped Brie

  • cup dried pineapple, chopped
  • 1 tbsp dried cranberries
  • 1 tsp balsamic vinegar, pomegranate infused
  • 2 tbsp brown sugar
  • 2 tbsp water
  • Salt, a dash
  • tsp dried rosemary, chopped (optional)
  • 1 round Brie cheese, 10 ounce or 19.6 ounce
  • Crackers

Pre heat oven to 400.
In a non-stick pot, add fruit, sugar, water, vinegar and salt.
Bring to a boil then reduce to medium heat. Stir until thickened.
Remove from heat and add rosemary.
Set aside.

Remove top rind from cheese.
Place into a glass pie plate.
Spoon fruit mixture on top of cheese.
Bake for 12-14 minutes.

Serve with crackers.

Store leftovers in refrigerator, covered tightly.

You can also use regular balsamic vinegar.

Easy Banana Bread Recipe

Fall = chocolate chip cookies!

Chocolate Chocolate Chip Almond Latte Cookies

  • 1 bag Betty Crocker Snack Sized chocolate chip cookie mix
  • Butter and Water, per directions on the bag
  • 2 tsp cocoa powder
  • 1.5 tsp instant coffee granules
  • 1 handful chocolate chips
  • 1 handful slivered almonds

Pre-heat oven to 375.
Line a cookie sheet with no-stick foil.
Combine all ingredients together in a large bowl and drop with a teaspoon onto prepared cookie sheet.
Bake for 10-13 minutes.
Check after 10 minutes and put back in for up to 3 more if needed.

Chocolate Latte Cookies

Along with Fall comes Thanksgiving. Along with Turkey Day comes pumpkin pie!

Double Vanilla Pumpkin Pie

  • 1 1/2 cups fresh pumpkin puree
  • 1 can (12 ounces) evaporated milk
  • 2 eggs
  • 1 cup sugar
  • 1 tbsp flour
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 1/2 tsp each: ground cloves. cinnamon and pumpkin pie spice
  • 1 unbaked pie crust

Preheat oven to 450.

In a large bowl combine: pumpkin, milk, eggs, sugar, flour, salt and spices. Mix well with a wire whisk and pour into pie shell.

Bake for 20 minutes, then turn oven temperature down to 350 and bake for an additional 40 minutes (or until knife inserted into center comes out clean).

Tip: To prevent a burnt crust, I place a metal crust ring over the exposed crust before baking. If you do not have one, you can use aluminum foil.

Pumpkin Recipes

Take your family apple picking and make this next recipe together.

Cinnamon Applesauce

  • 3 apples, peeled and cut into small cubes
  • Cinnamon, to taste
  • Sugar, to taste (optional)
  • 1 tsp vanilla
  • 1/2 tsp ground Ginger
  • Water

Put apples and spices into a non stick pot over low heat.
Pour in 1 inch of water, cover and simmer.
Stir often and continue adding water so that apples do not burn.
Cook for about 20 minutes, stirring and adding water every 5 minutes.
Remove from heat and smash when apples are cooked (soft).
For chunkier sauce, mash while warm with fork.
For a smoother sauce, cool until just warm and add into food processor and pulse until you reach the texture you desire.

Eat warm or refrigerate.

Note: The sweeter the apples, the sweeter the sauce will be.

Grilling brisket: easy bbq brisket recipe

BBQ brisket is a summertime favorite but can be intimidating to the uninitiated. Visions of expensive smokers, long, involved procedures, or fears that the end result will be dried out, tough, or downright inedible keep many from giving it a try. In reality, this relatively inexpensive, flavorful cut of meat is easy to cook, and with a few simple preparatory steps, will be juicy, tender, and delicious every time.

What is the Best Brisket for Grilling?

The best brisket to get for grilling is the undivided, untrimmed brisket often called packers trim or cut. There will be a heavy layer of fat on top plus a thick line of fat between the flat and point sections of meat. The fat is necessary to keep the meat moist during the long cooking process, adds flavor, and is easily trimmed off after cooking. A minimum of 1/3 to 1/2 thick layer of fat is optimum over the top of the meat, and if the layer is thicker than that it can be trimmed to make as even a layer as possible.

How to Grill Brisket

Step 1: Marinate (optinal)

Marinating the brisket is optional, but will help to flavor and tenderize the meat. Wash the meat thoroughly, pat dry, trim the outer fat layer to about 1/2 thick, and marinate it overnight. Any commercial meat marinade will be adequate and should contain some type of acid to tenderize the fibers of the meat. Here is a simple marinade that works well.

Marinade Recipe for BBQ Meat

  • 1/2 cup apple cider vinegar
  • 12 oz. Coke (or other cola beverage)
  • 1/2 cup soy sauce
  • 1 TBS liquid smoke
  • 1/2 cup olive oil
  • 1 TBS non-MSG meat tenderizer
  1. Place the clean, trimmed brisket in a 2 1/2 gallon zip lock bag, or in a non-metal container.
  2. Combine the marinade ingredients and pour over the brisket, making sure to coat the entire surface of the meat.
  3. Refrigerate 8 hours or overnight, turning occasionally.

Step 2: Apply Dry Rub

Approximately one hour before cooking, remove the brisket from the marinade and blot dry. Discard the marinade.

Apply a dry rub to the meat and set aside. A commercial mix, your favorite recipe, or the following recipe will do the job.

Basic Dry Rub Recipe

  • 1 cup brown sugar
  • 1/4 cup kosher salt
  • 1 TBS fresh ground black pepper
  • 2 TBS garlic powder
  • 1 TBS onion powder
  • 1 TBS paprika (smoked if desired)
  • 1 TBS chili powder
  1. Combine the rub ingredients and mix thoroughly.
  2. Rub a generous amount of the mixture into the entire surface of the brisket.
  3. Tear off two lengths (for double thickness) of heavy duty aluminum foil large enough to contain the brisket and be tightly sealed.
  4. Lightly spray the dull side of the foil that will be in contact with the meat with non-stick release spray or brush with oil.
  5. Wrap the meat and tightly seal the packet; set aside for 30-minutes or more.

How to Cook Brisket

While the brisket is resting, heat coals or a gas grill to a medium-low heat, about 275 F-300 F.

  1. When the grill is hot, add the wrapped brisket and cover the grill.
  2. Grill for 2-3 hours, turning every 30 minutes, until the meat is thoroughly cooked and tender.
  3. If deeper browning is desired, unwrap the meat and place directly on the grill until the desired color is achieved.
  4. Remove from the heat and allow to rest, covered, for 20 minutes before cutting.
  5. Slice the brisket thinly, against the grain.

Serve as is or with a favorite BBQ sauce.

Cheap and Easy Backpacking Food

The coming of spring means that many people in Eastern New Mexico will be going backpacking. Packing food for a multi-day hike usually means eating a lot of crackers and peanut butter or spending a small fortune on dehydrated MREs. There are some great recipes, however, for backpackers who want a little more variety but dont want to carry a lot of extra cooking equipment. The ingredients for these meals should be easy to find at your local grocery store. The recipes do not require a lot of extra preparation, but taste a lot like you would make for dinner if you werent camping.

The key to good backpacking food is to find recipes that can mostly be made ahead of time and require very few steps to complete once youre actually in camp.

Pancakes

In a plastic storage bag, combine 1 cup batter mix (such as Bisquick), 1 tbsp dry milk, and 1 tbsp sugar. Once youre in camp, add 2/3 cup of water and 1 tbsp margarine to the bag. Seal the bag and squish repeatedly to get out the lumps. Poke a hole in the corner of the bag and squeeze batter onto a hot pan. Once bubbles form, flip the pancakes. This should make about six pancakes.

Asian-Style Beef and Noodle Casserole

In a plastic storage bag combine 3 tbsp of shredded beef jerky, one package of ramen noodles (discard any flavor packet), one package of instant onion soup (the 11oz size works best), 2 tbsp mixed vegetables, tsp garlic powder, tsp ground ginger, and tsp cilantro. In camp, heat two cups of water to near boiling and add it to the bag. Stir until noodles and vegetables are rehydrated. If desired, add soy sauce.

Rocky Road Pudding

At home, combine the contents of one 3oz box of instant chocolate pudding and 2/3 cup of powdered milk in a plastic storage bag. In a second bag combine cup each of chopped nuts and mini marshmallows. Once youre in camp, add two cups of cold water to the first bag and mix well. Add the marshmallows and nuts after pudding thickens.

Of course, there are also some great recipes that you can make ahead of time and carry with you. This is an ideal option if you are trying to limit your carry-weight by eliminating cooking equipment altogether. These recipes are a vast improvement on the typical store-bought protein and granola bars; they taste better and are a lot cheaper to make.

Lemon Ginger Granola Mix

In a large bowl mix together two cups of rolled oats, cup of wheat germ, cup chopped nuts (walnuts are a good choice, but some people prefer pecans), and three tbsp of brown sugar. Add cup of honey, 1 tbsp of olive or sunflower oil, the zest and juice of one lemon, and 1 tbsp of grated fresh ginger (use dried if necessary). Pour the mixture onto a cookie sheet and bake at 250 F for about 30 minutes. Add raisins if desired.

Latte Bars

In a mixing bowl beat together three eggs, 1 cups of sugar, 2 tsp of vanilla, and cup of melted butter. Then stir in two cups of flour and tsp of salt. Set aside 1 cups of this batter, then add cup of instant coffee crystals and cup milk or heavy cream to the remaining batter. Spread the coffee batter in a greased 13 x 9 pan. Add cup of chocolate chips to the reserved batter and spoon over the coffee batter. Sprinkle 1 cup of pecans over the top of the batter, then bake for 25 minutes at 325 F. When cool, cut into bars and wrap tightly.

6 easy ways to cook and eat healthier

Just because you want to try and eat healthier doesn't mean you have to lose flavor.Try these tips to improve your nutrition:


1. Variety is essential: Eating the same foods over and over again is boring and can restrict your nutrient intakes. Try to eat different colored foods (fruits/vegetables) daily to ensure a variety of antioxidants. Using marinades, sauces and rubs can spice up meats without adding a lot of extra calories. Try using different oils to impart new flavors; sesame oil adds an Asian flair to food, while coconut oil can enhance flavors in baked goods.


2. Dont be afraid to add a healthy fat to your food: Fat is essential for healthy skin, imparts flavor and helps to keep your appetite satiated for a longer time. Olive oil should be your first choice for cooking. Some other oils to try are: Grapeseed, sunflower, canola, flaxseed (this shouldnt be used for cooking, but use in dressings and marinades), soybean, hempseed and coconut (although it contains saturated fat, it is a medium chain triglyceride which bypasses the liver and therefore doesnt mess with cholesterol levels).


3. Make vegetables taste good: One of the best ways to increase vegetable intakes is to make them taste extra good by roasting, BBQing, adding light sauces, light dips, a sprinkling of sharp cheese, a drizzle of olive oil, a dash of flavored salt or gasp!a bit of butter.


4. Use avocados in place of mayonnaise: This works for many sandwiches, just mash and spread on bread to add flavor, moisture and some healthy fat. This is especially good on turkey sandwiches.


5. Boost nutrition in small ways: You can add a lot of extra nutrition by adding purple cabbage, shredded carrots and avocado to a salad. Try putting diced red and green peppers into tomato sauces. Top cereal with frozen, fresh or dried fruit and flaxseed meal (ground flax seeds). Add pureed cauliflower to macaroni and cheese or lasagna. Add a few tablespoons of flaxseed meal to any baked good (i.e. muffins, breads, cookies).


6. Be adventurous: Try cooking new things and keep an open mind. Many people shy away from tofu because they dont know how to cook with it and the last time they tasted it, it reminded them of a dry sponge sandwich. Tofu is an inexpensive and tasty protein and when cooked and seasoned right, delicious! Tropical oils got a bad rap in the 80s and 90s, but did you know that coconut oil is actually one of the healthiest oils, especially if you have high cholesterol. Try new seasonings to perk up boring food.

Last minute Thanksgiving recipes from the 'Queen of Quick and Easy'

Today is November 21, 2012, the day before Thanksgiving. While television and magazines show the perfect hostess calmly decorating her table with hand-twined raffia napkin rings, the truth is that most of us are flying around at the grocery store around 7:00 p.m. in a wild panic. While the occasional Martha Stewart does exist, most of us are not her. These last-minute Thanksgiving recipes may help you as you prepare for what should be a special, relaxed family day.

If you had a bird's eye view inside happy homes across the United States celebrating Thanksgiving, you would realize that most of these hostesses are just like you: a busy wife, mother, employee, church member, etc...They have learned how to minimize the effort and maximize the holiday memories.
