Easy Cooking Recipes: Easy, economical, exquisite chicken

Sometimes the simplest ingredients yield the most incredible food. Cooking on a budget doesn't have to mean prepackaged overly processed junk. Take this braised chicken as an example: using bone-in chicken cuts meat costs in half. Onions, celery, and carrots are among the cheapest selections in the produce department. Dijon mustard adds a ton of unique flavor without breaking the bank. Affordable, delicious, and healthy to boot! Score!

Ingredients:

4 bone-in skin-on chicken thighs
salt and black pepper, to taste
Non-stick cooking spray
2 tsp butter
1 cup carrots, thinly diagonally sliced
1 cup onion, julienned
cup thinly sliced celery
cup dried cranberries
tsp dried thyme
tsp dried sage
2 tsp Dijon mustard
cup water
2 cups chicken broth

Directions:

Season both sides of chicken with salt and pepper.
Coat a large saut pan with non-stick cooking spray. Melt butter over medium-high heat. Add chicken to pan and brown on both sides (about 5-6 minutes). Remove chicken from pan and cover to keep warm.
Add carrot and the next 3 ingredients and cook until mixture begins to soften, stirring often. Add in thyme and sage, and then add the mustard and mix well. Add in remaining ingredients, whisking to scrape cooked bits off the bottom of the pan; simmer.
Return chicken to the pan. Cover, reduce heat, and simmer for 35 minutes. Uncover and bring heat back up to medium high. Reduce until sauce is thickened, (8 to 10 minutes).
Serve over rice or egg noodles.

While braising does take a little longer than some other methods, it is basically foolproof and produces the most succulent fork-tender chicken. Some things really are worth waiting for! Dig in!
