Recently I have been totally digging Pinterest. Sure, I'm a little late in the game, but I was avoiding it because I knew once I got into it, it would be this "black hole" of perfectly usable time. :) However, I am in the process of using it for the marketing aspect. I figured I may as well get the hang of it, as I do have some of my freelance clients interested in using it. Figured it would be a good "skill set" to build.
But I digress. I have found several awesome, easy recipes on there that I have been wanting to try, so I started out with a Mongolian beef recipe that almost looked too easy to be true. It was originally posted on Pink Bites, and it was receiving rave reviews from individuals that had tried it. So I had to as well.
This is a very family-friendly meal, and when I made it, I served it up with some rice and some steamed broccoli. It was delicious! Here is the breakdown of the recipe:
1 pound of flank steak, thinly sliced crosswise
1/4 cup of cornstarch (or flour)
3 teaspoons canola oil (or vegetable oil)
1/2 teaspoon of grated ginger
1 tablespoon of chopped garlic
1/2 cup of water
1/2 cup of soy sauce
1/2 cup brown sugar
1/2 teaspoon of red pepper flakes
3 large green onions
I started out with the meat. Sliced the flank steak very thin, then covered with flour. I made sure they weren't totally covered because you just want it lightly dusted with it. Use a colander to shake off extra cornstarch or flour if necessary. Set aside.
Heat up half the oil in a wok at medium-high heat. Throw in the garlic and ginger, then immediately add the water, soy sauce, brown sugar, and red pepper flakes. Continue cooking for about two minuets, then transfer to another bowl.
Then turn the heat up to high, add the other half of the oil and heat up. Throw in the sliced flank stead and cook quickly until browned. This does NOT take long at all. Once browned, add the sauce back to the wok. If you want thicker sauce, let it continue to cook and reduce down. Otherwise, slice up some green onions, throw in before serving, and add a little on top for garnish. Done!
This was such an easy recipe, and it had nice, simple flavors to it. Nothing too complex that wouldn't keep it "kid-friendly." When I made it, the sauce was a little thinner than I would like, even with cooking it down, but I also had .80 pounds of flank steak. If I was working with steak with a similar weight, I would have probably skipped the 1/2 cup of water myself. Also, since my daughter (4) didn't want to even try it, next time I make it I will likely add some more red pepper flakes for heat.
Otherwise, this is a GREAT recipe! Tweak it how you like to make it right for you and your family! This may become a family favorite!
