Below is an amazing and oh-so-easy recipe for Crockpot Italian Chicken. This recipe requires only a few ingredients and takes only about 4 hours of cooking time! To make Crockpot Italian Chicken, you will need:
- 4 chicken breasts
- 1 (or 2) packets of Zesty Italian Seasoning
- 8 oz. of cream cheese
- 2 cans cream of chicken soup
- 1 box of rotini noodles
- Double this recipe if you are eating with more than three people!
Let the cream cheese thaw for about 30 minutes before you start working on this recipe. After the cream cheese is thawed, mix the cream cheese, cream of chicken soup, and Italian Seasoning in a big bowl until all the ingredients are thoroughly integrated. Lay your 4 chicken breasts in the bottom of the crockpot, then spread the cream cheese mix on top. If you're doubling this recipe, use only half of the cream cheese mix on the 4 chicken breasts, layer the next 4 chicken breasts, then spread the second half of the cream cheese mix. Cover the crock pot, and turn the heat to low. I was worried the first time I did this that the chicken breasts wouldn't cook thoroughly enough, but they were perfect when they came out!
About 30 minutes before your chicken is done cooking, start cooking your rotini noodles so they're nice and soft. When the chicken is done, just put the chicken breasts on top of the noodles and you have a perfect meal!
I live with my husband and roommate, so we just ate this with steak knives, but if you have kids, you can cut the chicken into bites or strips before you put it in the crock pot for easier eating.
