A long weekend camping trip can be a great way to seize the end of summer and enjoy the cooler weather. Make the most of your trip by cooking meals that don't take a lot of prep work but taste delicious.
Tinfoil Packs are a great option when camping. This meal is very versatile and cooks quickly. Each tinfoil pouch will serve one person and the food should be portioned accordingly. Hamburger, chicken filets and fish work well for this meal. For the vegetables, add thinly sliced fresh veggies or use canned or frozen vegetables. The packs can be made before leaving and stored on ice in a sealed container or can be assembled in front of the campfire.
To make the packs, cut large pieces of tinfoil and lay them flat. Place your choice of meat and vegetables in the center of a piece of tinfoil and add salt, pepper, a small pat of butter and any other seasonings you'd like. Form a pouch by bringing the sides of the tinfoil together and rolling them down tightly (like a chip bag). Next, roll each end up.
Cook the packs on hot coals for 15-20 minutes. They should not be buried and do not need to be flipped. When unwrapping the packs, be careful of hot steam and juices.
If the camping trip gets rained out, these tinfoil packs can also be made at home. Prepare as directed above and bake them for 20-25 minutes at 325F.
